Purple Carrot Hummus
What to do when a large bunch of purple carrots catches your eye? These are really good for you and, apparently, came before the orange carrots we are so used to seeing these days.
Well, you could just keep it simple and steam them and serve as a side dish.
Or you could make this eye-catching and delicious purple carrot hummus. It’s quick and simple. And, of course, you could try it with regular carrots.
Purple Carrot Hummas Ingredients
- 3 medium purple carrots
- 1 can of chickpeas
- 2 cloves of garlic
- 4 tbsp tahini
- 2 lemons
- 1 tsp ground cumin
- 1 tsp salt
- 80-100ml olive oil
Method
Steam the carrots until tender, then roughly chop them.
Drain the chickpeas.
Roughly chop the garlic.
Add the carrots, chickpeas, garlic, tahini, zest of two lemons, juice of one lemon, cumin and salt to the larger bowl of a food processor and blend.
Once the ingredients are well combined, keep the motor running and add the olive oil slowly, until you get your desired consistency. Blend until your hummus is smooth.
Taste and adjust your flavourings until you get the taste you like. Plenty of garlic for me!
I sprinkled a little smoked sea salt on top to finish it off.
