Polenta Chips
How often do you go through your kitchen cupboards to see what you actually got? Well, a recent inspection revealed FIVE bags of polenta (three already open!) . Time for action…polenta chips!
Polenta Chips Ingredients
- 1 litre vegetable stock
- pinch of salt
- 200g polenta
Optional flavourings:
Grated parmesan cheese
Thyme
Rosemary
Chilli flakes
Method
Line a tin (around 20cm x 20cm) with baking paper.
Bring the vegetable stock to the boil in a medium saucepan with a pinch of salt.
Slowly add the polenta, stirring all the time. Check the packet to see how long you should cook the polenta – probably around 15-20mins. Continue to stir the polenta until it starts coming away from the edge of the pan. At this point you can stir in some grated parmesan cheese and/or add some chopped herbs or chilli flakes.
Pour the polenta into the prepared tin, cover with cling film and leave to cool completely (a couple of hours or overnight).
Preheat the oven to 200°C/.
Tip the cooled polenta onto a chopping board and cut into thick chips before placing them on a baking tray. Brush them with a little olive oil, and season with salt and pepper.
You could also sprinkle some fresh herbs and some chilli flakes over your chips at this stage.
Bake for 35-40mins, turning the chips once halfway through baking.
